Ingredients:- 1 medium cauliflower, cut into florets (500g)
- 1 tsp chilli powder (5g)

- 11 tbsp olive oil (15ml)
- 8 small corn tortillas
- 1 cup shredded cabbage (100g)
- 1/2 cup pickled red onions (50g)
- 1/4 cup fresh cilantro, chopped (10g)
- 1 lime, cut into wedges
- Salt and pepper to taste
- 1 red onion, thinly sliced (100g)
- 1/2 cup apple cider or red wine vinegar (120ml)
- 1/2 cup water (120ml)
- 1 tbsp sugar (15g)
- 1 tsp salt (5g)
- Preheat oven to 400°F (200°C). Toss cauliflower florets with olive oil, chilli powder, cumin, salt, and pepper. Roast for 20-25 minutes until golden and crispy.
- For the pickled onions: In a saucepan, bring vinegar, water, sugar, and salt to a boil. Pour over sliced onions in a jar and let sit for at least 30 minutes.
- Warm the corn tortillas in a pan or oven.
- Assemble the tacos: Fill each tortilla with roasted cauliflower, shredded cabbage, pickled onions, cilantro, and a squeeze of lime juice.
- Serve with lime wedges on the side.
